EXAMPLE OF ITINERARY: GOLDONI'S COUISINE IN VENETIAN VILLAS
The course offers, in the mornings, theoretical and practical classes on Venetian recipes, both in Italian and English. In the afternoons there will be visits to Veneto's architectural heritage, wine and oil producers, and handicraft studios (Murano's glass manufacturing, Vicenza's gold, shoemaking handicraft producers, Burano's lace, and every ancient profession linked to the Venetian navy).
This cooking course takes place in the ancient “Dominion of Bagnoli”, which, built by Longobards and passed through Venetian Renaissance, came to us almost perfectly intact.
“One thousand hectares and one thousand years of history” is the motto of this fascinating place in Padua's countryside.
What is interesting, and quite rare now-a-days, it is that we use materials entirely produced by the villa's estate for our cooking classes. Dominion of Bagnoli, in fact, operates in the whole food production chain, producing wine directly from its grapes, high level meat, rice, flour, sausages, and more.
At the estate's core Villa Widmann Borletti stands out, keystone of the surrounding towns for centuries.
It is a highly articulate construction, built on top of the first Longobard settlement (950AD) and turned into a majestic Renaissance masterpiece.
Here Carlo Goldoni wrote many of his plays – performed on a theatre build expressly for him by the villa's owner. Thanks to his genius, that same theatre came to be the world first school of drama, where Goldoni was a teacher himself.
The park's statues, arranged according to a theatrical logic representing classic Venetian characters, used to hide actors hired by Goldoni to perform his plays – the “Talking Statues' Play”.
The current owner, Count Borletti, has restored the performance with the help of modern technologies – thus reinventing the charm of the dialectal Goldonian comedy.
The Friulian wine variety, moreover, produces an intense wine – top of the range of the entire local cuisine. Hospitality is always available within the Dominion's colonnade.
The course involves an articulated study on ancient Venetian recipes, created only with the villa's products. Furthermore, there will be tours of the famous “Walled Towns”: Este, Monselice, Montagnana, and Bevilacqua – that preserved medieval walls and traditions intact.
In the whole surrounding territory medieval rituals periodically take place, where costumed people perform ancient palios and literary disputes.
We set specific dates for this course although, for groups larger than 6 people, we can arrange both a different date and duration. The schedule could be subjected to variations, but not without previous agreement.
MORE OPERATIONAL INFORMATIONS:
1st day – ACCOMODATION IN THE VILLA. Tasting and presentation of the course program and historic recipes of Goldoni's age. Dinner with traditional local recipes.
2nd day – SAUCES. From the trade with the East, Venice used to import fabrics and jewellery, but above all she imported spices, incredibly important for both the enrichment of the recipes and the food preservation. They are particularly important for the preparation of sauces – essential to most Italian recipes. In the afternoon there will be a visit to Palladio's Villa Badoer and dinner with traditional Polesine's recipes.
3rd day – RICE. Ancient recipes including risottos, rice soups, rice salads, rice cakes and so on. In the afternoon there will be a visit to Montagnana, then dinner and show at Bevilacqua Castle.
4th day – GAME. Venice's lagoon has always been a great shooting ground for Venetian hunters, and its birds has become integral part of the traditional cuisine. In the afternoon there will be a lagoon excursion towards the ancient “fishing valleys” and the Venetian Republic's hydraulic system. Dinner within the fishing valley.
5th day – DESSERTS. Venice's Navy has created unique dessert recipes with the distinctiveness of keeping for long periods, perfect for sweetening long boat trips. In the afternoon there will be a visit to Montecchia and Valbona Castle and, after dinner, the “Talking Statues' Play” at Dominion of Bagnoli.
6th day FINAL GALA DINNERThe morning will be dedicated to the collective production of a final menu, that will be tasted and judged by a group of local entrepreneurs.
